Hallelujah! The Central Iowa Summer Heat Wave of 2011 has officially broke!

I mean, don’t get me wrong, it was still 90+ degrees today, but the children are playing outside again, the AC unit no longer requires hosing down to reach below 85 degrees, and gusts of wind don’t feel like blasts from a blow torch.

I’d say that’s a win, wouldn’t you? ;)

It was actually kind of weird driving home and seeing people out and about on foot again. It’s been like a ghost town around here for the past two weeks, since it’s just been too hot to go outdoors.

I joined in the celebration by going for my first outside run in what felt like ages – 3.25 miles on the trail (angry bird has vacated the premises!!!!!!!) followed by a 30-20-10 Workout Circuit*:

30 Frog Crunches

30 Reverse Crunches

30 Side Crunches (each side)

30 Pushups

30 Bicep Curls

30 Tricep Dips

*Repeat the circuit doing all moves 20 times each, than again doing all moves 10 times each. Take a 1 minute break between each circuit.

Boy I really needed this today today though. The heat has had me feeling super lethargic this past week and not wanting to work out at the end of the day. AT. ALL. I’ve only managed to get in a couple of walks since last weekend, so it felt great to sweat because of some serious effort, and not just because I was standing out in the sun eating fro yo… ;) 

In other news, I am on a serious no-meat kick this week! First with the Spinach & Quinoa Bake, then the Fruit & Feta Salad, and now this – The Perfect Veggie Burger from Oh She Glows. :D

This burger really IS perfect! Not mushy, full of flavor, held together perfectly while cooking and, although it took a bit of prep time, made 8 big burgers!


The recipe starts by combining bread crumbs (I used panko) with homemade oat flour.  


All you do to make oat flour is throw some oats in a food processor and let ‘er rip. Easy!

Toasted almonds & sunflower seeds get added to the mix,


along with black beans,  


grated carrot, ground flax seed (Hy-Vee bulk bins) and other yummy ingredients & spices.  


The "dough" is really easy to shape into patties and, unlike its meatier counterparts, can be taste tested to make sure the spice levels are all a-ok before cooking. I actually had to think twice before I tasted the dough. I knew there was no meat in it, but it was still tripping me out!


Angela at Oh She Glows says you can cook the veggie burgers in one of three ways. Bake, grill or pan-fry. She likes the third option the best, so that’s what I went with. A few minutes on each side in hot EVOO and my burgers were golden brown and crispy in no time.


Huzzah! Meatless CAN be fun!

I melted an oozy layer of fontina cheese on top (less than $4 for a big wedge at Trader Joe’s,) smeared on a blob (just typed blog!) of cold ketchup, and stuffed it all between a squishy, fresh hamburger bun from Great Harvest (I die…)


The Perfect Veggie Burger – ’nuff said. I loved it!
